Paneer Pulao
Paneer Pulao is an all time favourite pulao recipe with veggies and healthy paneer. It is a recipe with whole spices, paneer, veggies and Basmathi rice.
Paneer is very good for health especially for kids as it is rich in protein and gives lot of energy. When paneer is included in biryani or pulao it gives immense taste to the dish. Now let's get started with the recipe.

Adjust the Ingredients according to the number of people you cook for.
Ingredients
Paneer-200 gms
Oil-3 tbsp
Ghee-2 spoons
Bay leaf-1
Cardomom-2
Cinnamon-1
Cloves-2
Star anise-1
Onion-1(thinly sliced)
Green chilli-6
Ginger garlic paste-1 spoon
Coriander leaves-1 cup
Mint leaves-1 cup
Rock salt-1 tsp
Garam masala-1 spoon
Basmathi rice-1 cup
Water-2 cups
Beans-1 cup
Carrot-1 cup
Recipe
To start with the recipe, first we have to shallow fry the paneer pieces so that the paneer would retain its shape while cooking or else it will break off.
First cut the paneer pieces into small cubes. Now take a pan, add oil and shallow fry the paneer cubes by flipping over on both sides. Transfer them to a plate and keep it aside.
Take a pressure cooker, add 2 tbsp oil and 2 tbsp ghee. After its heated, add the whole spices one by one given in Ingredients and saute a little. Add 1 onion(thinly sliced), 6 green chillies(slit), 1 spoon ginger garlic paste and saute till the raw smell goes. Now add 1 cup of fresh coriander leaves and mint leaves(washed well) and saute a little.
Next add the veggies, carrot and beans each 1 cup. We can add even green peas to the dish. Now add the roasted paneer pieces to it and saute well. Now add 1 tsp of rock salt, 1 spoon garam masala and mix well.
Take 1 cup of basmathi rice, washed well and soaked for 20 mins. Add the rice and mix gently without breaking the basmathi rice. Add 2 cups of water which is a measure for 1 cup basmathi rice.
Close the lid and cook for 2 whistles.
After the pressure is released, open the lid and mix gently. Now the pulao is ready and can be served hot with any gravy and Onion raitha.
