Aapam with Coconut milk
Aapam is a very tasty and Authentic Breakfast recipe usually served with Coconut milk , Vegetable Stew, Vegetablekurmaor payaa. It is a recipe famous in Kerala but nowadays it's famous all over South India. Aapam is Crispy in the sides and Soft and spongy in the centre. The taste and perfection of the Aapam is accurate when the batter is grinded perfectly.
Let's see how to grind Perfect batter for Aapam.
Serves-10
Grinding Time-15 mins
Cooking Time-5 mins
Adjust the Ingredients according to the number of persons you cook for.
Ingredients:
Idly rice-2 cups
Raw rice-2 cups
Urad dhal-3/4 cup
Fenugreek-2 spoons
Aapam soda-1 spoon(diluted in water)
Grated coconut-1 cup
Boiled rice-1 cup
Rock salt-2 spoons
Recipe:
Take a vessel, Add 2 cups Idly rice,2 cups Raw rice, 3/4 cup Urad dhal, 2 spoons Fenugreek. Wash all the Ingredients twice and Add water and soak for 4 - 6 hrs. After it's soaked well. Add them to the grinder and start grinding. While grinding , add 1 cup of grated coconut, 1 cup boiled rice and 2 spoons of rock salt. Grind it to a smooth batter consistency. Transfer to a vessel and ferment it over night. After 12 hrs, take the batter add 1 spoon of Aapam soda(mixed in water) and mix it well. The batter should not be very thick. It should be in a pouring consistency.
Take a Aapam kadai, take required amount of batter, pour it and spread well. Close and cook in medium flame. After it is cooked open the lid and transfer to a plate. It is crispy in the sides and soft in the centre. Serve it with Coconut milk.
Coconut milk:
Take 2 coconuts and grate them well. Add them to a mixer jar in 2 parts with water and grind well. Take a white cloth add the grinded coconut and squeeze it well. The coconut milk is collected in the vessel below. Grind it 3 times and squeeze the milk completely. Add required amount of sugar and mix well. Serve it with Aapam and enjoy the dish.
