Andhra Pesarattu

Pesarattu is a dosa recipe made of green gram and idly rice. This is a special dosa recipe in Andhra. It is very healthy as it consist of green gram which is rich in fibre. 

This can be had with any chutney but tastes good with Spicy ginger chutney popularly known as Aallam pachadi. 

This is a great Breakfast recipe and this batter need not be fermented and can be made immediately after grinding.

Note: Fermentation not required

Serves-5

Preparation Time-4 hrs to soak and grinding the batter takes 10 mins

Cooking Time-10 mins

Adjust the Ingredients according to the number of people you cook for.

Ingredients:

Green gram-2 cups(400 gms)

Idly rice-1 cup(200 gms)

Green chilli-8

Ginger-1 big piece

Rock salt-1 tbsp

Onion-2 finely chopped

Cumin seeds-2 tbsp

Oil-needed for making dosa

Curry leaves-few

Coriander leaves-few

Recipe

Take a bowl, add 2 cups of green gram and 1 cup of Idly rice and wash it twice nicely. Now soak both the Ingredients by adding 1 litre of water. Add 8 chillies and 1 big piece of ginger and soak them in water. 

The ingredients should be soaked for 4 hrs maximum. After 4 hrs drain the water and add them to the mixie for grinding. Grind it into a fine batter by adding 1 spoon of rock salt. After grinding dilute the batter by adding water to a dosa batter consistency so that it is crispy and thin. 

To the batter, add 2 spoons of cumin seeds, few coriander leaves and curry leaves and mix well. 

Take a dosa Tawa, add needed batter and spread it thin. Sprinkle some finely chopped onions, 2 tsp of oil and cook in medium flame. When it turns crispy transfer to a plate and serve it with any chutney of your choice.
