Spicy Ginger Chutney/Aallam Pachadi/Andhra special/Chutney recipe/Spicy and tangy chutney

Ginger Chutney(Aallam Pachadi)

This chutney recipe is from Andhra origin, very spicy and tangy recipe. This chutney is famously known as Aallam pachadi and goes very well with Andhra special pesarattu

The Main Ingredient in this chutney is ginger along with roasted masalas. This chutney can also be had with Idly and dosa.

Serves-6

Cooking Time-15 mins

Adjust the Ingredients according to the number of people you cook for.

Ingredients

Ginger-50 gms

Garlic-6 cloves

Dry red chilli-14

Tamarind-lemon sized(soaked in warm water)

Cumin seeds-1 tbsp

Mustard seeds-1 tsp

Coriander seeds-1 tbsp

Chana dhal-1 tbsp

Urad dhal-1 tbsp

Curry leaves-few

Rock salt-1 spoon

Sesame oil-4 tbsp

Jaggery-2 tbsp

Recipe

Take a pan, add 2 tbsp of sesame oil and add 50 gms of ginger and 6 garlic cloves and roast them well. After roasting transfer to a cup. In the same oil, add 1 tbsp of coriander seeds, chana dhal, cumin seeds, urad dhal and roast till golden brown. Then add 12 dry red chillies and saute a little. Switch off the stove and let it cool completely.

Take a mixer jar, add all the roasted Ingredients, 1 spoon of rock salt and grind coarsely. Then add tamarind pulp, jaggery and grind to a smooth paste. 

For tempering, take a kadai, add 2 tbsp of sesame oil. After it get's heated, add 1 tsp of mustard seeds, cumin seeds, few curry leaves, 2 dry red chillies, 1 tsp of urad dhal and roast it well. Add the roasted Ingredients to the chutney and serve it with Idly, dosa or Andhra special pesarattu.
